Located in Bedford (Qc), our sugar shack is an integral part of a family farm measuring approximately 300 acres. Since our beginning in 1995, the number of maple trees we've tapped has progressively increased from 800 to almost 3000. A system of tubing is used in order to collect the maple water, which is then boiled in the old-fashioned way. This means that we evaporate all of the water, without concentrating it beforehand. In this day-and-age, very few maple syrup producers choose to proceed in this manner because the process requires many additional hours of boiling. It is in our benefit, however, because the prolonged boiling time allows for all of the flavours to be accentuated and developed in their entirety. In the end, we are rewarded with a maple syrup of exceptional quality and flavour. Believe us when we say that our clients can tell the difference!!!
